Sauteed potatoes with spices and herbs

INGREDIENTS AND INSTRUCTIONS
Main Ingredients:
Ginger and garlic paste- 2 tbsp
Coriander powder, dry and roasted - 1/2 tsp
Cumin powder, dry and roasted- 1/2 tsp
Tumeric powder- 1/2 tsp
Red chili powder- 1/2 tsp
Crushed black pepper- 1/2 tsp
Kalwanji seed-2 pinch
Cumin seeds-1 tsp
Salt- as needed
Garam masala- 1/2 tsp
Green chillies- 5 small, mixed with water for watery paste
Dry kasoori methi- 10 to 12 tbsp
Lemon juice- 1/2 lemon
Oil- 8 to 10 tbsp
Red potatoes- 8 to 10 medium, peeled, thin and round slices
Water- 200 ml or as needed
Garnish:
Small fresh ginger-1, chopped
Green chili- 2, chopped
INSTRUCTIONS:
1. Wash the potatoes. Peel and cut in thin round slices. Let them soak in water.
2. Heat oil in a pan. Add cumin seeds,salt, kalwanji seeds, garlic ginger paste, green chilli paste, cumin powder, coriander powder,crushed black pepper,tumeric powder, and red chilli powder.
3. Mix and cook for 5-7 minutes on medium flame until it turns light brown.
4. Add 2 to 3 tbsp of water or as needed.
5. Continue to cook for a few more minutes until oil seperates from the masala.
6. Then, add dry kasoori methi leaves and 2 to 3 tbsp of water. Continue cooking on medium flame for a few minutes.
7. Add additional 2 to 3 tbsp of water or as needed in order to avoid the masala from being too thick.
8. Add in potatoes and cook for a few minutes on medium flame.
9. Add about 1/2 cup of water or less.
10. Simmer in low flame and covered for 15 to 20 minutes.
11. Check if potatoes are ready by poking the potatoes with a fork. (If potatoes are not ready, add more water as needed. Then, simmer in low flame and covered again for 10 to 15 minutes.)
12. Then, add garam masala and lemon juice.
13. Add garnishes like ginger and green chillies.
14. It's ready to be served!
